Ingredients

1 whole chicken
-
1 stick (½ lb) of butter
-
1 lemon
-
salt & pepper
-
1 tsp+ of dried rosemary
-
a few thyme sprigs
-
2 carrots
-
1 onion
-
2 garlic bulbs
-
2 sticks of celery
Directions
Preheat oven to 450°F
Add rinsed chicken to a cast iron pan, stuff butter under the skin of the chicken.
Sprinkle salt & pepper on the chicken to your liking
Sprinkle some rosemary too
Zest the entire lemon on the chicken
Chop the carrots and celery, add to pan around the chicken.
Leave the garlic & onion in the skin, but chop a couple times so the pieces will fit in the pan and the flavors can release, add to the pan.
Slice the zested lemon and place it in the pan along with the veggies.
Bake for about 50 minutes, remove from oven, spoon the sauce all over the chicken and put it back in the oven for 10-15 minutes or until the internal temperature reaches 165º F at the deepest part of the thigh without touching bone.
Remove from the oven and let it sit for at least 10 minutes before carving.
Sprinkle with pluck superfood seasoning and enjoy!

The roasted garlic is just delicious on fresh sourdough!
