Sourdough Cinnamon Rolls

These are a holiday morning tradition in our house! I prep them the day before so the morning of I just toss them in the oven and their delicious smell fills our home!
Ingredients

8 tablespoons (113 g) butter (cold)

2½ cups (400 g) flour

½ cup (100 g) sourdough discard

1 cup (240 g) buttermilk
-
(25 g) honey
-
(4 g) real salt
-
1 teaspoon baking powder
-
½ teaspoon baking soda
-
¾ cup coconut sugar
-
2 teaspoons ground cinnamon
-
4 tablespoons butter (melted)
-
1 tablespoon butter (melted)
-
1 cup powdered sugar
-
1 teaspoon vanilla extract
-
2 tablespoons milk
Cinnamon sugar filling
Icing glaze
Directions
THE MORNING BEFORE 7am
MIX THE DOUGH: Use a cheese grater to grate the cold butter into a mixing bowl. Add the flour, and use a pastry cutter to cut the butter into the flour. Add the sourdough discard, buttermilk, honey, and salt. Mix with a spatula until well incorporated. Cover the bowl and let it rest on the counter for 10-12 hours. (DO NOT add the baking soda or baking powder, this will be added right before rolling out the dough)
THE EVENING BEFORE 7pm
MAKE CINNAMON SUGAR: Melt the ½ stick of butter over low heat, then add to a separate bowl with the coconut sugar & cinnamon, mix well and set aside.
ADD LEAVENING AGENTS: Mix the baking powder & baking soda in a small bowl with a fork until there’s no more lumps. Then add to the dough, mix well with your hands.
ROLL OUT DOUGH: Generously flour your counter and turn the dough onto it. Flour the top of the dough, and roll out with a rolling pin into a 12” X 24” rectangle.
CUT OUT ROLLS: Sprinkle the cinnamon sugar evenly over the dough, leaving ½ inch border along the edges. Starting on the longest side, roll the dough into a log shape. Use a bench scraper to cut the dough log into about 12 pieces. Place the rolls in the buttered cast iron pan.
Cover with plastic wrap and store in the fridge overnight.
THE MORNING OF
Preheat oven to 375°F.
BAKE: Bake for 35-40 minutes or until the tops are golden brown.
ICING: Mix the glaze ingredients in a small bowl while the rolls are baking. Once done baking, remove from the oven, top with the glaze, and enjoy the sweet gooey cinnamon rolls.
