I love to top them with whatever fruit is in season! In late summer I use figs, in fall I use apples, in winter I use pomegranate or pears, in spring I use berries!
Ingredients

2 cups Cottage cheese (pasture raised or raw)

4 eggs
-
1 cup Einkorn flour
-
4 teaspoon baking powder
-
½ teaspoon real salt
-
½ teaspoon baking soda
-
1 banana
-
Splash of vanilla extract (to your liking)

Dash of cinnamon (to your liking)

Coconut oil for cooking in the pan or skillet

Top with seasonal fruit
Directions
Mash the banana with a fork in a large bowl.
Add all other ingredients and mix well.
It should be a nice chunky mixture.
Melt coconut oil on your skillet or pan over medium-low heat, then scoop the batter with a ¼ cup measuring cup, so all the pancakes are the same size. Cook until golden brown, top with fresh fruit and or homemade whip cream for some extra fun, and enjoy!
Recipe Note
In the fall I top the pancakes with maple cinnamon apples.
Here's how to cook the apples:
In a separate pan, heat 1-2 tbsp of butter over medium heat. Slice 3-5 apples really small. Add them to the pan along with some pure maple syrup and cinnamon. Stir frequently until the apples cook down, and the maple reduces and gets thick and sticky (these cook while you're making the pancakes), then it's all ready at the same time to enjoy!
Whipped Cream
On special occasions, and around the holidays I'll make whipped cream to top the pancakes and my kids absolutely LOVE it! Yours will too! ps. it's also delicious on top of coffee or hot chocolate.
1 pint (organic pasture raised or raw) heavy cream
1 teaspoon (+/-) vanilla extract
1 tbsp (+/-) pure maple syrup
Add all ingredients to a stand mixer with the whisk attachment, (or a bowl with a hand mixer) and beat until the cream forms the perfect whipped consistency!
