Ingredients

2 tablespoons butter

1 onion
-
3 cloves garlic
-
1 butternut squash (peeled and chopped into cubes)

½ teaspoon salt

¼ teaspoon pepper

2 cups beef bone broth (unflavored)

1 can pumpkin puree
-
1 can coconut milk
-
2 tablespoons pure maple syrup

Fresh thyme & pumpkin seeds for topping
Directions
Peel and cut the butternut squash into cubes and place in a separate bowl
Heat butter in a large pot on medium heat. Peel & chop the onion, and place in the pot. Cook for about 3-4 minutes until translucent. Add garlic and cook for about 1 minute.
Add the butternut squash, salt & pepper, cook for about 7 minutes, stirring frequently so it doesn’t burn.
Add the bone broth, maple syrup, pumpkin, and coconut milk. Bring to a boil, then put a lid on and simmer for about 15 minutes.
Remove from the heat, let the steam subside for a couple minutes, then blend right in the pot with an immersion blender. **If you don’t have one you can transfer to a blender (make sure you don’t have the lid on all the way, the heat will make it explode and you’ll have hot soup everywhere, just leave it slightly cracked)
Top with fresh thyme, pumpkin seeds, and some raw cream if you have it!
