This pot roast recipe blends the nutrient density of warm bone broth, with tangy balsamic vinegar and sweet coconut sugar for a pot roast that will surely become a seasonal favorite of yours.
Its so easy to make, just chop the vegetables, add all ingredients to the pot, and let the crockpot do its thing.
Ingredients

1 large chuck roast 3-4 lbs (pasture raised)

32-64 oz beef bone broth
-
¾ C with balsamic vinegar (for cooking)

¼ - ½ C dijon mustard
-
½ C balsamic vinegar (for toping at the end)
-
½ C coconut sugar
-
2 sprigs fresh thyme
-
salt & pepper to taste
-
3 large carrots
-
6-8 small red potatoes
-
1 sweet onion
Directions
Olive oil bottom of crockpot
Add meat
Top meat with ample salt & pepper
Cover the whole top of the meat with dijon
Add ¾ C of balsamic vinegar
Chop all vegetables & add to pot
Add herbs & as much bone broth as desired, depending how wet you like your pot roast.
Cover & cook on low for 7 hours
Pull the meat apart then add back to the pot
Add balsamic vinegar & coconut sugar
Stir, and adjust to your desired taste
***Recent Update
I recently updated the recipe to be more gut friendly, I simply removed the wine and garlic. One night I didn’t have red wine so I replaced it with balsamic vinegar, and garlic has been hurting my gut so I skipped it. My hubby (never told me before until this time) that he used to get acid reflux after eating it and did not this time. Now this is my new way to make it :)
